Dairy free lemon balm & blueberry recipe
My mind is blown. This recipe I made is so delicious ๐ Made from lemon balm from my garden, dairy free, honey ๐ฏ instead of sugar and is ready in 10 minutes!

Hereโs what I did:
โจ In a blender cup add: 1/2 cup sweetened oat milk, handful fresh lemon balm leaves, handful of frozen organic wild blueberries. Blend those up.
โจ In a measuring cup pour in 1/2 cup full fat coconut cream, then add the lemon balm blended mixture to the measuring cup
โจ add a dash of vanilla & 1 tablespoon of honey to the measuring cup
โจ Pour the liquid from the measuring cup into a sandwich size ziploc bag, seal up the bag with no air inside.
โจ In a large gallon size ziploc fill with ice a little over half way full. Add in 1/3 cup of salt to the ice bag. I used Himalayan since the thicker chunks of salt work better.
โจ place the smaller liquid bag into the large ice bag. Then close it up & start SHAKING! Covering with a towel helps to keep your hands from hurting from the cold. Youโll need to shake for about 8-10 minutes ๐ช๐ป
โจ the small liquid bag will start to change texture and become ICE CREAM!! Itโs so cool.
Dish it up & enjoy. This recipe was so tasty. Every bite my 4 year old kept saying โoh yum, yuuuummm!โ This cooling, refreshing treat was a hit. A new summer staple in our house now ๐จ ๐ซ ๐ฟโจ
