If there’s one thing you make today, let it be t If there’s one thing you make today, let it be this! Summer sip recipe ☀️

This herby, tart, slightly sweet summer sip is just what you need today! Fresh squeezed grapefruit juice + a powerful herbal syrup, makes the perfect duo.

Thyme, after reading the monograph in my favorite resource - the herbarium (link in bio), I feel it’s one of those powerful herbs we should try to incorporate more into our daily lives. Most known for being connected to the respiratory & digestive systems, thyme is excellent at opening airways, reducing bronchiole inflammation and can act as a protector against infections. “Thyme contains powerful volatile oils that are key in its herbal efficacy, so fresh plant preparations are considered best.” Grow some in a pot to always have on hand! Thyme also has the ability to stimulate movement of energy, blood, and oxygen to the digestive tract. So neat, I didn’t know that! There are other fascinating factoids about thyme in the herbarium, too much to list here. But members, go take a read, I’ll bet you’ll learn something you didn’t know! 💚

I often find that using herbs in creative ways, not just a tea or tincture, although both excellent preparations, I tend to use it more often. With a safe to consume herb like thyme, having a little everyday is much more beneficial. So for this, I made a potent thyme simple syrup. Easy to make and oh so delicious, you’ll want to do it too!

Here’s what I did:
✨ Thyme simple syrup: in a pot combine a handful of fresh thyme sprigs + 1/2 cup sugar + 1/2 cup water. With heat on medium, allow the sugar to completely dissolve. Turn off the heat & allow it to cool in the pot while you prepare the juice.
✨ Fresh squeeze one large grapefruit to get one cup of juice. Pour into a small pitcher.
✨ Next, pour in one cup sparkling mineral water, I love @mountainvalleywater
✨ lastly, strain your thyme simple syrup, using a fine mesh strainer. You’ll next add in 1/2 cup thyme simple syrup to the pitcher.
✨ Mix everything together & enjoy over crushed ice, maybe even a sugar rim!

This delicious summer drink is refreshing, not too sweet & has a wonderful herbal punch of flavor thanks to thyme

Another first!! 🫙

This month has been full of firsts for me and it’s been so exciting & fun! I took a canning class yesterday and it was just what I love to do. Learn new things, have a hands on experience & share it with you all 💛✨

I have never canned before. Much like making sourdough, it has always seemed intimidating. But, yesterday, I realized just how approachable canning really is! 🙌🏼

I detailed my experience & the tips I’ve learned on my blog. Take a look at my stories for the link or check the link in my bio to read all about it.

I just had to share, because I know this group appreciates learning a new skill!

Make your own lavender simple syrup

The other day I had a rare mom moment, I got some alone time!! 🤗 I went to a coffee shop & ordered the most delicious lavender latte I’ve ever had! Each sip was sweet and unique & I couldn’t get it out of my head.

I decided to make my own at home & let me tell you, you need to try this! ☕️ It’s easy, hence “simple syrup” & once you make a batch, you’ll have it on hand for other delicious additions as well.

Lavender simple syrup:
✨ in a pot bring 1 cup of sugar, 1 cup of water & 2 tablespoons of lavender flowers to a boil.
✨ Let simmer to allow the sugar to melt. Stir and heat for about 10 minutes.
✨ strain out the lavender flowers with a cheesecloth to catch the small particles & bottle up your syrup, that’s it!!

It’s sweet, delicious, has a hint of lavender taste & perfect for - coffee ☕️ , tea 🫖 , pancakes 🥞 & other baked goods!

Lavender latte:
✨ Start by making your coffee, I recently turned to @kion bc they test for mold & have high quality beans, let me say they are DELICIOUS!
✨ Make your latte hot or cold, this spring weather has me reaching for different options each day 🙃
✨ for the best balance, I found that about 1 tablespoon of lavender simple syrup was perfect!
✨ next, top it off with delicious milk, my favorite is @raw_farm_by_op
✨ stir & enjoy!

This is such a special treat. It taste like a gourmet coffee house latte and a perfect weekend recipe to try ☕️✨💜

Acid + honey + nutrients

Oxymels are one of my favorite ways to create an herbal remedy! Combining these powerful bases, that come with their own long list of benefits, with an herb like nettle, makes for a recipe you all have to try! 🌿

Click the link in my bio, I wrote up a blog post on this. Detailing the benefits, uses & shelf life. But I also wanted to briefly summarize some of the benefits here:

🌿 Nettle: high antioxidants content, helps with inflammation and histamine response. Also super nutrient rich.
🌿 Apple cider vinegar: acid pulls out herb’s beneficial properties, ACV is full of good bacteria, perfect for gut health.
🌿 Raw honey: soothes a dry throat, full of nutrients & high sugar content helps the shelf life of your herbal creation.

The folk methods of herbalism is so forgiving. You can alter this recipe to your own preference and still yield the same benefits! I like to do a 1:1 ratio of vinegar to honey. Some add more honey vs vinegar, or vice versa.

Elderflower cordial + preserving them into cubes
I was pushing my son on a swing at our campground. Mid swing, I tell my husband “I’m going to go check out a bush, I’ll be right back” 😂 his face. But as I got closer I knew I just struck gold. A giant elder! For the first time I got to forage fresh flowers to turn it into something special.

It’s hard to believe the tiny elderflowers have such a strong, sweet aroma, but they sure do! As powerful as their smell, is the power of their beneficial properties. Mostly known for being antiviral, elderflower is such a help when you’re dealing with a sinus cold or respiratory issues. Because it is anti inflammatory, elderflower can reduce inflammation of sinus tissue and allow for the movement of congestion. - THE HERBARIUM (link in bio)

This recipe highlights everything you’d want from fresh foraged elderflowers. A cordial is a sweet medicinal tonic that extracts the beneficial properties all the while tasting pleasant.

Here’s how I made elderflower cordial:
✨ start by collection about 10 heads of elderflower blossoms, rinse throughly, you can’t imagine how many bugs 🐜 I got out of mine! Let them dry.
✨ in a 32 ounce jar, place the blossoms, stems removed.
✨ pour in 1 cup of raw honey 🍯 yes honey! I opted to do this instead of sugar, if you’ve been around a while, you know I love honey for the taste AND benefits.
✨ next, add in about 4 slices of organic lemon 🍋
✨ fill the rest of the jar with warm water & mix well until the honey dissolves
✨ cover & let sit for 2 days
✨ it’s normal for the flowers to brown a little!
✨ strain out the flowers & tada 🎉 you have an elderflower cordial!

You can use this as is, much like a syrup. Perfect to add to lemonade, cocktails or a splash in mineral water. To take it a step further, freeze some up like I did! Pouring the cordial into an ice tray preserves the sweet liquid. Not to mention, how perfect for portion sizing your drink! I use 2 cordial cubes, then fill the rest of my cup up with sparkling water. It’s delicious! Keep your unfrozen cordial in the fridge & it will last a couple weeks.

YOU GUYS I DID IT! I made sourdough bread for the very first time & I’m so excited! It was on my 2022 goal list - whew it was quite the process, but look at how it all came out. AND I made homemade herb butter AND floral infused honey to spread on top 😋 this is a spring snack you’ll want to save & try 💛

I think I’ve found the perfect bite! Soft chewy, warm sourdough bread with a powerful rosemary garlic butter, balanced by a sweet floral honey. WOW, is it good! All homemade too using some local small businesses (even better). The sourdough steps are way too many to try & explain here, but check out @ferm.farm I bought their 200 year old 😳 sourdough starter & followed their online recipe to make the bread. For a 1st timer, I think it came out great! For the butter, swipe the photos for a little step by step & check out @raw_farm_by_op for the most delicious cream to use. For the floral honey, I was lucky enough to visit @ocmicrofarm & take home some edible flowers. What better way to use them than infusing in honey & pretty garnish!

Here’s what I did:
✨ start by making sourdough bread, I got my starter from @ferm.farm
✨ next, make your own herb butter, I added rosemary & garlic to mine & it’s out of this world delicious! (Pictures for step by step)
✨ lastly, infuse some edible flowers like these violas into raw local honey for a couple days, perfect for drizzling on breads, yogurts & more
✨ assemble them together & you have the most perfect bite!!

I could sit under this tree all day snack on this spring treat. Listening to the hummingbirds zip by and watch the occasional butterfly find a flower to perch on. I’m just so excited that I can finally say I’ve made sourdough (🤗) & my goodness I didn’t realize how easy it was to make butter. Can you tell I love this recipe?
