Can you feel the shift? The one where the ground begins to thaw. The leaves begin to bud and your garden glitters with dandelions everywhere.
I would like to think my 4 year old single handedly is responsible for the entire neighborhood looking like a field of wishes ๐ with each plucked dandelion, a new wish and consequently more new dandelions are made ๐ฌ
As I dive deeper into the medicinal benefits of these wish makers, I couldnโt help but want to recreate an old classic.

Made famous centuries ago, this combo has a little cult classic following in Britain. Dandelion is an amazing herb to get to know. Sheโs a gentle diuretic, a digestive aid, a liver booster and blood sugar regulator. All of this and that is specifically just using the roots.
To make this spring soda, hereโs what I did:
โจ 1 tablespoon dandelion root
โจ 1 tablespoon burdock root
โจ a few pieces of ginger
โจ a couple cloves
โจ simmer together for 30 minutes, then strain
โจ bring back to the pot & add 1 tablespoon coconut sugar and simmer until sugar dissolves
โจ add a dash of honey
โจ mix 1/4 cup of your dandelion & burdock decoction with 3/4 carbonated mineral water
โจ mix & enjoy!
This herbal soda is so perfect for the change in seasons. Youโre getting the benefits of both dandelion and burdock with a hint of sweetness. It almost taste like root beerโs distant cousin ๐
